Ingredients

3 Tbsp. Kosher Salt, Plus More As Needed
2 Lb. Ramps, Cleaned, Green Leaves Trimmed To 1\" Past White And Red Parts
1 Cup Apple Cider Vinegar
1 Cup Sugar
1 Tsp. Mustard Seed
1 Tsp. Black Peppercorns
1 Tsp. White Peppercorns
1/2 Tsp. Caraway Seed
1/2 Tsp. Fennel Seed
1/2 Tsp. Cumin Seeds
1 Bay Leaf
Instructions

3 Tbsp. Kosher Salt, Plus More As Needed Procedure

2 Lb. Ramps, Cleaned, Green Leaves Trimmed To 1" Past White And Red Parts Procedure

1 Cup Apple Cider Vinegar Procedure

1 Cup Sugar Procedure

1 Tsp. Mustard Seed Procedure

1 Tsp. Black Peppercorns Procedure

1 Tsp. White Peppercorns Procedure

1/2 Tsp. Caraway Seed Procedure

1/2 Tsp. Fennel Seed Procedure

1/2 Tsp. Cumin Seeds Procedure

1 Bay Leaf Procedure

Instructions Procedure

Combine salt, all remaining ingredients (except for Ramps), and water in a 4-qt. saucepan. Bring to a boil over medium-high heat; cook, stirring, until sugar is dissolved, about 2 minutes. Pour and Strain mixture over ramps and seal jar. Let cool to room temperature and then refrigerate up to 2 weeks.
